		<description>Well congratulations!  Cooking for one can be a bit of a drag but at the same time a great opportunity to experiment in the kitchen.  Cooking larger quantities and freezing the leftovers to be eaten at a later time works well for me, since it saves time and money while allowing you to not eat the same thing for several days in a row.  Do you like tofu?  I usually just marinate it and then mix it with rice and a steamed vegetable from my local farmer&#039;s market.</description>

		<description>1) Put the holy trinity in a frying pan with a dab of oil (HT= garlic, peppers, onions chopped/sliced/diced however the heck you want them) and cook until they smell good and are a yummy color.
2) dice/chop/slice however the heck you want a piece or 2 of boneless, skinless chicken and throw that in the pan with the HT
3) when no longer pink, place ingredients in a tortilla shell, add salsa, sour cream, shredded cheese at your desire and chow down! 

makes a super easy, super yummy fajita- one of our favorites :-)
